Notably, seaweeds contain over 50% 1,3-β-glucans, a significantly higher concentration compared to yeast’s 5-15%. These straight chain 1,3-β-glucans with a particle size of 1 to 3 μm presented in seaweeds are highly soluble and bioavailable. The immunomodulatory activities of 1,3-β-glucans polysaccharides found in seaweeds are well-documented. These compounds stimulate non-specific immune responses, regulate cytokine and chemokine production, activate natural killer cells, T cells, and B cells, and recruit immune cells to vital sites like the intestinal wall, making it crucial for maintaining gut health. In addition, seaweeds possess remarkable antibacterial and antiviral properties attributed to phenolic compounds, carrageenan, sulphated proteoglycans, and dextran sulphates, further highlighting their potential in combating infectious diseases.
The other polysaccharides such as oligo-fucoidan, galactans, and ulvans, are also significant for enhancing the body's defence mechanisms by inducing immune responses, making it more active and responsive to potential threats. These polysaccharides play a role in activating natural killer cells and cytotoxic lymphocytes, which are responsible for identifying and eliminating infected or abnormal cells. Above that, these compounds promote the maturation of dendritic cells, the immune cells in mucosa, which are crucial for initiating immune responses. They generate antigen-specific antibodies and memory T cells, aiding targeted immune responses and help the immune system to recognize these pathogens upon future encounters. Moreover, these seaweed polysaccharides interfere with virus attachment and replication by directly interacting with the virus or by mimicking viral surface proteins, thereby disrupting virus infections.
